Upper Pasty

Ingredients

Crust ingredients:
3 Cups flour
1 tsp salt
1 cup (8oz) chilled lard, cut into small pieces.
1 egg
ice water
Other ingredients:
1 1/2 lbs. cubed sirloin tip,round steak or venison.
4 cups small cubed potatoes.
1 cup cubed carrots.
1 cup diced turnip or rutabaga (opt.)I think they enhance the flavor.
1/2 cup chopped onion
1 tablespoon salt
Generous amount of pepper
3 tbsp. butter
powdered beef broth to taste.

Cooking Instructions

1. To make crust, mix 3 cups flour and salt.  Cut in lard until size of small peas. Break egg into measuring cup; mix lightly.  Add enough ice water to measure 1 cup.  Add egg mixture to flour, tossing lightly with a fork until dough forms.  I just mix it in a kitchen aid mixer.  Wrap in plastic wrap or wax paper; chill at least one hour.
2: To make filling, mix all remaining ingredients except butter and flour. Ingredients include salt, generous pepper and powdered beef seasoning or use a beef gravy mix.
3: To form and bake pasties; Preheat oven to 400 degrees. Grease 1 or 2 large baking pans.  On a floured surface, divide dough in six equal portions Rollout each portion into an eight or nine inch circle.  Divide filling into six portions and place each portion on bottom half of each dough circle. Some put the circle over a pie plate and tilt it toward them so when they add the ingredients its held in a pocket. Place 1/2 tablespoon of butter on each filling portion.  Using extra flour to prevent sticking, fold dough over filling. Press to seal by folding small sections of dough to make a rope-like edge. Place on baking pans.  Bake 15 minutes; reduce heat to 375 degrees; bake additional 30-45 minutes.  If frozen cook for 1 1/2 hours. Serve with ketchup.chili sauce or beef gravy. Great for making ahead for those no cooking days, picnics or the hunting cabin.
When there baking in the oven they give off such a wonderful aroma that kids passing the house outside will say. "Wow, I wish I was eating supper in their house tonight
