Surf and Turf

Ingredients
|
Thickly sliced veggies for the grill,
including eggplant, tomatoes, zucchini, onion and mushrooms.
Slice each about 3/8th inches thick.
Venison Steak - back strap is the best cut for this, though
any steak will do.
1 walleye fillet
1 cup sweet port wine
1/2 cup olive oil
2 tbsp minced garlic
Salt/pepper to taste

Cooking Instructions
Marinate venison steaks overnight, first brush the veggies
with a sauce made up of the olive oil, garlic and salt and
pepper to taste. Place the veggies on the grill.
Brush the steak and fish with the olive oil and garlic mix,
and grill quickly. Steaks should be medium rare and be very
careful not to overcook the fish. The instant it starts to
separate when you stick it with a fork, turn it and cook for
just seconds.
Chunky blue cheese dressing is great for dipping the
veggies. |
