Thaw fillets, if frozen. Cut into
serving portions and place in well-greased, hinged, wire
grills. Combine remaining ingredients into a sauce and
baste the fillets with it. Place fillets about 4 inches from
moderately hot coals and cook for approximately 8 minutes.
Baste again with sauce. Turn and cook for another 7 to 10
minutes longer, or until fish flakes easily when tested with
a fork.

Because fish flake easily as their
cooking time nears completion, they should be placed in a
well-greased, long-handled wire grill that is hinged so that
fish can be held firmly in place during turning or removal
without losing shape
