Blackened Walleye

Ingredients
|
1 fillet of frozen or fresh walleye
oil or butter
Ingredients for Cajun spices
1 tsp dry mustard
2 tsp ground thyme
4 tsp paprika
1 tsp ground oregano
1/4 tsp cumin
2/3 tsp black pepper
1/2 tsp white pepper
1/2 tsp cayenne pepper
1/2 tsp curry powder
1 tsp garlic granulate
1/2 tsp onion salt
2 tsp Cajun seasoning
1/4 tsp salt |
Cooking Instructions

Take fish, dip in butter and smother in tons of Cajun
seasoning sear in a hot pan on both sides,
three minutes each side to blacken...do not burn, just
blacken to seal.
Add 2 ounces of white wine,
cover and let fish cook for five minutes more. (350
to 400 degrees)
NOTE
Best with stir fried mixed
vegetables and rice. |
